This is my go to banana loaf recipe. It is super easy to make and delicious!
I like to add a tsp of cinnamon and a handful of raisins or chocolate chips but it is lovely just as it is.
Ingredients:
2lb loaf tin
100g softened butter
175g caster sugar
2 large eggs
2 ripe bananas mashed
225g Self raising flour
1 tsp baking powder
2 tbsp milk
1 tsp cinnamon (optional)
handful of sultanas/raisins/choc chips (optional)
Recipe:
Preheat the oven to 180c fan/gas mark 4, lightly grease the tin and line with non stick baking parchment.
Measure all the ingredients into a mixing bowl and beat with an electric mixer for around 2 minutes until well blended.
Spoon the mixture into the loaf tin and level the surface
Bake for about 1 hour, until well risen, golden brown and a skewer inserted to the middle comes out clean.
Leave the loaf to cool in the tin for a few minutes and then peel off the parchment and transfer to a wire rack to cool completely.
